Aurelia pink is completly natural. We infuse organic extra virgin olive oil with a small percentage of plant-based pigments extracted from beetroot — less than 5%, nothing artificial, no colorants, no additives. The world's first pink EVOO, developed alongside Tecnalia and Universidad Politécnica de Madrid. The oil? Exactly what it has always been, liquid gold.
No. Not at all. It tastes and smells identical to Julia, our classic EVOO — fruity green olive, fresh herbs, smooth attack with gentle bitterness . The colour is purely visual. Every organoleptic property remains completely untouched. Same oil. Different conversation.

Because we follow EU food labelling regulation No 1169/2011, which requires the product name to reflect its composition. Aurelia is made of organic extra virgin olive oil infused with natural beetroot concentrate — so that's what the label says. The honest name the law requires. Still pink. Yes, both of them. Both are made from 100% certified organic extra virgin olive oil, sourced from the same estate in Larva, Jaén. Julia bears the EU organic logo on the bottle — which can be verified in our Traceability section. Aurelia is exactly the same organic oil, with one slight difference in labelling: EU regulations require that all ingredients in a product must be certified organic in order to display the logo. Our beetroot pigments are 100% natural and plant-based, but they are not certified as organic — which is why the organic leaf cannot appear on Aurelia’s label, even though the oil itself is entirely organic. You will find ‘from organic farming’ in the list of ingredients on the back label.
We source our organic olive oil from a Single estate in Larva, Jaén — the olive oil capital of the world. Single varietal Picual, harvested in early October at peak ripeness, cold-extracted below 27°C within hours of picking. One origin. Nothing blended. Full traceability in every bottle
Away from direct sunlight and heat. At room temperature is ideal once opened, use within 2–3 months with the cap sealed.
One thing worth knowing about Aurelia: natural pigments can settle over time. We recommend keeping it in its case horizontally. A gentle shake for 5-10 seconds brings the pink back instantly — it's a sign of a natural product.
