PICUAL: The Queen

Not all olives are equal. L'Aurea selects only organic Picual — the undisputed queen of Spanish olives, and the most planted in Andalucia for a good reason. Harvested in late October, when the fruit is still green and full of character.

Intensely fruity, with fresh herb on the nose, a clean bitterness and a spice that builds slowly on the finish. Bold, expressive, premium. This is not a coincidence. This is a choice.

Extra Virgin & Organic-What does it mean?

Extra Virgin is the highest grade in olive oil. First cold extraction only, normally below 27°C,. No refining, no blending, no heat. Acidity must be below 0.8% — an indicator of freshness and quality. Early Harvest vs late Harvest: It matters?

The harvest date is the single most important decision in olive oil

Early harvest — Late October: The olive is still green. Polyphenol content is at its peak — up to 400–500mg/kg in Picual. The flavour is intense: fresh herbs, green tomato, a clean bitterness and a peppery finish. Early harvest produces 30–50% less oil per kilo of olives, hence a higher price

Late harvest — December onwards: The olive is fully ripe. Higher oil yield per kilo - which is why other producers wait. The result: a golden, mild, smooth oil with less polyphenols. Easier to produce and cheaper to buy.

This is the reason a 500ml bottle of early harvest EVOO costs €20–25, while a standard supermarket bottle costs €8–10. Fewer olives, harvested days before peak ripeness, milled within hours to lock in flavour and polyphenols before they decline. You cannot get this quality any other way.
