Not all olives are created equal. L'Aurea selects only the Picual variety — the queen of the Spanish olive grove, the most cultivated in Andalusia, and not by chance. Harvested at the end of October, when the fruit is still green and full of character.

The Harvest: The Most Important Decision
Harvest date is key to olive oil quality
Early harvest — late October. The olives are still green. Polyphenols are at their highest — up to 400–500 mg/kg in the Picual variety. The flavor is intense: fresh grass, green tomato, a clean bitterness, and a distinctive finish. Early harvest yields 30–50% less oil per kilo of olives. Hence, the price.
Late harvest — from December. The olives are fully ripe. Higher yield per kilo — which is why many wait. The result: a golden, smooth, and sweet oil, with fewer polyphenols. Easier to produce and cheaper to buy.
That's why a 500 ml bottle of early harvest EVOO costs between €20-25, while a standard supermarket one costs €8-10. Fewer olives, picked days before their peak ripeness, with few hours to preserve the flavor and polyphenols in their original state. It's the way to achieve that quality.
